When chocolate first came to Europe, it was a luxury good only the rich could afford. In 1828, though, Dutch chemist Coenraad van Houten discovered a process for treating cacao beans better.
The process is called “Dutch processing” and the cacao powder obtained is known as “Dutch cocoa,” which combined with the chocolate press invented by his father helped make chocolate affordable for everyone.
